We love this simple couscous salad. It does not take more than 10 minutes of preparation time, but it is healthy and tastes good. It is also really nice to prepare it before you go to sleep (put it in the frigde over night) and take it to University the next day. Then you have a tasty lunch and you do not need to buy something in the cafeteria.

What you need:
250g Couscous
8 Cherry Tomatoes or 3-4 normal Tomatoes
A handful of arugula
Lemon juice (of half a lemon)
Olive oil (ca. 2Tablespoons)
Spices!! (Curry, Chili, Pepper, Salt …. Whatever else you like)
How to do it:
1. Prepare the couscous according to the instruction on the packaging.
2. Wash the tomatoes and the arugula, slice the tomatoes into pieces.
3. When the Couscous is ready put it in a bowl and add the lemon juice, the olive oil, the tomatoes and the arugula. When it is still too dry add some more oil.
4. Now season it!! The salad needs a lot of spices to taste good, so do not hesitate. We used a lot
of curry and chili powder, salt and pepper. But you can use whatever you like most. Do not
forget to mix everything in the end.
