One week ago on the 5th (sorry, we are all christmas-stressed-out, so the post is coming a bit late) we followed a Dutch tradition and had a little Sinterklaas celebration. Since celebrating without food is just half the fun, we thought that something quick and easy but also fancy would be nice to have. We improvised a bit and proudly present now our "Fancy Baguette Burger"!! Delicious minced meat, fresh tomatoes, arugula and cucumber, self-made green pesto and a topping of parmesan... Have fun! If you make more of the pesto than in the recipe, you can eat the day after pasta with pesto: super simple and very tasty!
For 2 people
What you need:
For the Baguette-Burger:
250g minced meat (preferably beef)
1 onion
2 baguette rolls
A handful of arugula
Ca. 6-8 cherry tomatoes
A few slices of fresh cucumber
Parmesan (as much as you like!!)
For the self-made green pesto:
(amount of ingredients depends on how much you want as a sauce for the burger, this is how much we used)
A handful of basil leaves
Three tablespoons of olive oil
1 clove of garlic
Some nuts (we used cashew nuts)
50g of parmesan
What you need:
For the Baguette-Burger:

How to do it:
1. Cut the onions into pieces and mix it with the minced meat
2. Form 4 hamburger and let them fry in a pan with some olive
3. In the meanwhile prepare the pesto: put all the ingredients in a plastic cup and use a hand-held blender to puree it. You can do it as finely as you want. We used cashew nuts for the pesto, although it is “normal” to use pine nuts. But we figured out that cashew nuts are cheaper.
4. Cut the baguette rolls into halves
5. Wash the arugula, tomatoes and cucumber
6. Cut the tomatoes into halves and slice the cucumber
7. When the meat is as you like it (as bloody as you like ;) ) you can start making the actual baguette burger
