Viva México again! When you had a bad day because nothing went like it should go, this meal is perfect as a dinner in the evening as it is always a success!
For 4 people:
- 400-500 grams of pasta (e.g. Penne)
- 3 chicken fillets
- Salt and pepper
- 150 g Gouda
- 1 onion
- 1 garlic clove
- 300 ml of milk (we prefer soy milk and cream)
- 200 g whipped cream
- 1 can corn
- 100 g cherry tomatoes
- Tortilla chips (as many you like!)
- Cook the pasta in salted water according the package directions. Wash the chicken fillets and cut them into small cubes. Rub the entire cheese. Put aside 1/4 cheese for gratinating. Peel and chop one onion and one garlic clove.
- Heat oil in a saucepan. Add onion and garlic and sauté it. Pour in the milk and cream. Melt the cheese in the sauce. Season it with salt, pepper and vegetable bouillon. Heat oil in another pan and roast the chicken.
Preheat the oven. Wash and cut the tomatoes into halves. Drain the pasta. Add the sauce, corn, chicken and tomatoes and mix everything. Put everything into a baking dish. - Crumble the chips over it. Sprinkle everything with the remaining cheese. Bake the casserole in the oven for 20-25 minutes.
