One week ago on the 5th (sorry, we are all christmas-stressed-out, so the post is coming a bit late) we followed a Dutch tradition and had a little Sinterklaas celebration. Since celebrating without food is just half the fun, we thought that something quick and easy but also fancy would be nice to have. We improvised a bit and proudly present now our "Fancy Baguette Burger"!! Delicious minced meat, fresh tomatoes, arugula and cucumber, self-made green pesto and a topping of parmesan... Have fun! If you make more of the pesto than in the recipe, you can eat the day after pasta with pesto: super simple and very tasty!
This dish is a mix of sweet curry-honey chicken and rice with fresh onions. Since the dish has an interesting sweet taste, we liked to drink some ice tea with it... but why not make self-made ice tea? It is really simple and tastes much better than the ice tea from the supermarket.
Here is what we did: We brewed a can of green tea (you can use pure green tea, but also green tea with some flavour. We used green tea with vanilla) and sweetened it with honey. Then we put it in the fridge all the day and had nice ice tea in the evening!! If you like you can also add some juice to the tea, for example cranberry juice. We hope you enjoy the tea and of course this absolutley tasty dish! Have fun!! This recipe is healthy but at the same time super simple and do not need a long preparation time. Perfect after a long day of studying or University when your brain needs some new power. Use brown rice instead of white rice because brown rice is higher in fiber and nutrients.
You can have it with all vegetables you can imagine. We bought peppers, spring onions and broccoli (at the market) so that is what we used when preparing the meal. But of course if you have other vegetables at home, you can use them too. Just give it a try! We also added some coconut milk in the end, just to have the taste. If you do not like coconut as we do, or you do not have it at home, leave it out. Have fun during cooking!! |
